Almond Flour Chocolate Chip Cookies

We've made some changes to our diet recently that include eliminating white flour and sugar. In order to still enjoy sweets and baked goods I've made some substitutes - almond flour for white and stevia instead of sugar. The exception to the no sugar rule has been a small amount of dark chocolate...the darker the better. I recently found some 60% cacao bittersweet chocolate chips and decided to make cookies! I used this recipe but replaced the sugar with stevia.

They turned out great! The recipe only made 10 cookies which was perfect, they didn't last long!

Five Favorite Photos


Five of my favorite photos from this week.

I have been doing some sewing again. Before Jake came along I used to sew clothes for myself quite a bit. I have been sewing off and on since but it's been at least 10 years since I've made any clothes for myself. I made 2 tops and am now working on a pair of pants.

My sister and I took a trip to South Dakota on Saturday to visit our grandparents. We went out for lunch and did a little touring of the old school which now houses a fitness center and store. We had a nice visit and the kids enjoyed exploring the house and playing outside.

We drove back to Fargo after our visit and spent the night there at a hotel. Before getting to the hotel we stopped at Doolittles for dinner. I had the spit-roasted chicken and a glass of malbec...delicious!

The hotel we stayed at had a bunk bed and trundle...perfect for the three big kids! Jake had a blast playing with his cousins and helping with the littlest one.

Of course the highlight of any hotel stay is swimming.

Stampin' Up! Retired Items Sale!

Get them before they are gone! The retired accessories and Definitely Decorative (including D├ęcor Elements) lists are now available and won't stay around for long--these items are only available while supplies last!

When you look at the retired accessories list, you'll note that all of the Stampin' Pads are listed. This is for two reasons: (1) Craft Stampin' Pads will now only be available in black and white; and (2) we are introducing a new Firm Foam pad in our Classic Stampin' Pads with the 2012-2013 annual catalog. The Firm Foam pads offer better ink coverage and, in turn, better stamped images.

In addition, please note the following about the new catalog:

  • Only select Stampin' Write Markers will be available individually (Stampin' Write Markers in color collections will continue to be offered)
  • 12" x 12" Textured Card Stock will no longer be offered 
  • 12" x 12" Smooth Card Stock will only be available in select individual colors and color collections

The new catalog will be available June 1, 2012!
